Inima Negoska Rose
Varietal Rose Dry Wine
Characteristics:
The nose is dominated by floral and vanilla aromas, combined with notes of red fruits and spices. In the mouth is bold, with a similar aromatic character, elegant acidity and rich flavor. A rosé wine with a special personality.
Vinification:
The grapes are destemmed and gently crushed, followed by a short period of cold maceration at very low temperatures. Once the desired hue is achieved, the free-run juice is separated from the pomace, which is then lightly pressed. The must undergoes a gentle clarification before being inoculated with selected yeast strains. Alcoholic fermentation begins immediately and takes place in French oak barrels. Following fermentation, the young wine remains in barrel for approximately six months on its fine lees, gaining texture, complexity, and greater aromatic depth before bottling.
In Metsovo’s local Vlach dialect inima means ‘heart, soul’. This wine is an expression of the positive energy and enthusiasm of everyone who has put their heart and soul into the production of this new range of wines from Katogi Averoff.
