Wine distillate

Characteristics:

Clear, with a distinct aroma of herbs and flowers (rosemary and honeysuckle) and hints of coffee and chocolate. Smooth complex taste with a long-lasting aftertaste.

Production:

Production starts with the grape fermentation process, in stainless steel tanks, using local yeasts. The grape is then kept inside refrigerated tanks at a temperature of 8 °C in an inert (nitrogen) atmosphere for six months. At the end of this period, the fermented grape is dispatched to the press and the wine that is produced is then distilled inside copper pot stills, separating the head, heart and tails. Reverse osmosis is then used to dilute the distillate with ultrapure water, in order to ensure that it is free of chlorine, salts and heavy metals. Ultrapure water allows the aromatic and flavourful characteristics to fully develop in range and intensity. In the final stage of the process, the distillate is kept in stainless steel tanks under controlled oxygen conditions for another six months, in order to acquire a more rounded flavour and reach its aromatic potential.

Gundaba (red), Early Local from Metsovo (red), Vlachavona (Debina grape clone) and Pyknoassa.

Food Pairing

Mezze from all around Greece. Also pairs well with sweet desserts like baklava and walnut pie. Makes an excellent digestif.
