Chereso
Cherry Distillate
Characteristics:
Chereso displays pronounced and well-defined cherry aromas, complemented by subtle spicy nuances, with cinnamon at the forefront. The palate is gentle and well-balanced, offering a silky mouthfeel and an extended, elegant cherry-driven finish.
Production:
he cherry variety employed is ‘Tragano’, also known as ‘Edessa Cherry’. Harvesting took place during the final days of June. Production commenced with gentle crushing of the cherries, followed by alcoholic fermentation in the presence of both skins and pits. Fermentation was carried out at a controlled temperature of 10 °C for a duration of 15 days. This was followed by fractional distillation and subsequent maturation for one year in stainless steel tanks. Final reduction was achieved using ultra-purified reverse osmosis water, ensuring the absence of chlorine, mineral salts, and heavy metals.
