Tsipouro Cabernet Sauvignon is a distinctive single-varietal tsipouro, crafted from the finest grape pomace of the Cabernet Sauvignon variety.

The grapes from our Yiniets vineyard in Metsovo are used to produce Rossiu di Munte Yiniets wine. Once the wine is made, the remaining grape pomace is carefully transformed through a meticulous distillation process. Production begins with the fermentation of the pomace in stainless steel tanks. After alcoholic fermentation is complete, the fermented pomace is stored at low temperatures in an inert atmosphere inside temperature-controlled stainless steel tanks, using nitrogen to prevent the development of unwanted microorganisms.

Within a short period, the fermented pomace is distilled in traditional copper pot stills equipped with fractional columns, where the head, heart, and tail fractions are carefully separated. The distillate is then diluted with ultra-purified reverse osmosis water, free from chlorine, salts, and heavy metals, ensuring exceptional purity and balance.
