Inima Chardonnay Debina

Dry White Varietal Wine

Characteristics:

Complex aromatic bouquet, with notes of citrus, pear, peach and vanilla. In the mouth it is characterized by great intensity of aromas. It is rich and full-bodied, with a nice acidity that contributes to a balance taste and a long aftertaste.

Vinification:

Destemming, light crushing, and gentle pressing of Chardonnay in a pneumatic press. The must is then lightly clarified, inoculated, and put to oak and acacia barrels for alcoholic fermentation. Similarly, Debina is fermented in oak and acacia barrels following a mild clarification. After the fermentations are completed, the two wines are blended in a 70% Chardonnay, 30% Debina ratio and returned to the barrels for additional four months to enrich in polysaccharides and aromatic components from fungal autolysis.
